1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

2 cups spinach, chopped

2 tbsp olive oil

Fresh cilantro or parsley, for garnish

Optional: 1/4 cup crumbled feta cheese or avocado slices for serving

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and sauté for about 5-7 minutes until they start to soften. Stir occasionally to prevent sticking.

    Cook the Turkey: Move the sweet potatoes to one side of the skillet. In the cleared space, add the remaining tablespoon of olive oil. Add the ground turkey, breaking it apart with a wooden spoon. Season with smoked paprika, ground cumin, and cayenne pepper. Cook for 5-7 minutes until browned and no longer pink.

      Add Aromatics: Combine the sweet potatoes with the turkey, then add the chopped onion and garlic to the skillet. Cook for another 3-4 minutes until the onion is translucent and fragrant.

        Incorporate Bell Pepper: Add the diced red bell pepper to the skillet and mix well. Cook for another 3-4 minutes until the bell pepper is tender.

          Finalize the Dish: Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Taste and adjust seasoning if necessary.
