Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup chopped onions

2 cloves garlic, minced

1 cup diced bell peppers (red or yellow)

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

1/2 cup low-sodium chicken broth

2 tbsp olive oil

Fresh cilantro, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, boil diced sweet potatoes in salted water for about 10 minutes or until fork-tender. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent (about 3-4 minutes). Then, add the bell peppers and continue to sauté for another 3-4 minutes.

        Brown the Turkey: Push the vegetables to the side of the skillet and add the ground turkey. Cook until browned and cooked through, breaking it apart with a spatula (about 5-7 minutes).

          Mix in Seasonings: Add corn, black beans, cumin, smoked paprika, chili powder, and the drained sweet potatoes to the skillet. Stir well to combine all the ingredients evenly, and season with salt and pepper to taste.

            Combine with Broth: Pour in the chicken broth, stirring to combine. Allow the mixture to cook on medium heat for an additional 5 minutes.

              Assemble the Casserole: Transfer the turkey and sweet potato mixture into a greased 9x13 inch casserole dish. If using, sprinkle shredded cheddar cheese evenly over the top.

                Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and garnish with fresh cilantro. Let it cool for a few minutes before serving.
