Ingredients
  

1 pound ground beef (preferably lean)

1 medium zucchini, chopped

1 large sweet potato, peeled and diced

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sauté for about 8-10 minutes or until they start to soften, stirring occasionally. If needed, add a splash of water and cover to help steam them.

    Prepare the Veggies: Once the sweet potatoes are softened, add the diced onion and bell pepper to the skillet. Cook for another 4-5 minutes until the onion is translucent.

      Add Garlic and Ground Beef: Push the veggies to one side of the skillet and add the remaining tablespoon of olive oil to the empty side. Add the minced garlic for about 30 seconds until fragrant. Then, add the ground beef to the skillet, breaking it up with a spatula.
