1 lb ground beef

2 medium zucchinis, diced

1 large sweet potato, peeled and cubed

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder

1/2 tsp salt (to taste)

1/4 tsp black pepper (to taste)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Prepare the Sweet Potato: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed sweet potatoes and sauté for about 5-7 minutes until they start to soften, stirring occasionally. They should be partially cooked but still firm. Remove the sweet potatoes from the skillet and set aside.

    Cook the Ground Beef: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the chopped onion and garlic. Sauté until the onion becomes translucent, around 3-4 minutes.

      Add the ground beef to the skillet, breaking it apart as it cooks. Season with smoked paprika, cumin, chili powder, salt, and black pepper. Cook until the beef is browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

        Combine Ingredients: Add the sautéed sweet potatoes back into the skillet, along with the diced zucchini. Stir everything well to incorporate.
