Grilled Tandoori Chicken

4 chicken thighs, bone-in and skinless

1 cup plain yogurt

2 tablespoons tandoori masala (store-bought or homemade)

1 tablespoon garlic paste

1 tablespoon ginger paste

1 tablespoon lemon juice

1 teaspoon chili powder (adjust to taste)

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 tablespoon vegetable oil

Salt to taste

Fresh coriander, for garnish

Lemon wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, tandoori masala, garlic paste, ginger paste, lemon juice, chili powder, turmeric powder, cumin powder, vegetable oil, and salt. Mix well to create a smooth marinade.

    Coat the Chicken: Add the chicken thighs to the marinade, ensuring they are well-coated with the mixture. Cover the bowl with plastic wrap and refrigerate for at least 4 hours (or overnight for best results).

      Preheat the Grill: About 30 minutes before grilling, preheat your grill to medium-high heat.

        Prepare the Grill: Oil the grill grates lightly to prevent sticking. You can use a paper towel dipped in oil held with tongs for the application.

          Grill the Chicken: Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken pieces on the grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

            Rest and Serve: Once grilled, remove the chicken from the grill and let it rest for about 5 minutes. Garnish with fresh coriander and serve with lemon wedges on the side.
