4 ears of fresh corn, husked

3 tablespoons mayonnaise

1 tablespoon sour cream

1 teaspoon chili powder

1 teaspoon smoked paprika

1 lime, juiced

1 cup crumbled cotija cheese

2 tablespoons fresh cilantro, chopped

1 teaspoon sea salt

Optional: hot sauce for drizzling

    Prepare the Corn: Husk the corn, removing all silk. Rinse under cold water and pat dry.

      Mix the Sauce: In a bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, and lime juice. Mix well until fully combined.

        Grill the Corn: Place the corn directly on the grill. Cook for about 10-12 minutes, turning occasionally until all sides are charred and tender.

          Coat the Corn: Remove corn from the grill and immediately brush the prepared sauce over each ear while they’re still hot.
