500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

4 garlic cloves, minced

1 tablespoon ginger, minced

2 teaspoons garam masala

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon turmeric

2 tablespoons vegetable oil

1 large onion, finely chopped

1 can (400g) crushed tomatoes

1 cup heavy cream

Salt, to taste

Black pepper, to taste

Fresh cilantro, for garnish

Basmati rice, to serve

Instructions
 

Marinate the Chicken: In a large bowl, combine yogurt, lemon juice, minced garlic, minced ginger, garam masala, cumin, smoked paprika, turmeric, and a pinch of salt. Add chicken pieces, ensuring they are well coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

    Cook the Chicken: Preheat your grill or skillet over medium-high heat. Thread marinated chicken onto skewers and grill for about 5-7 minutes per side until cooked through and charred slightly. If using a skillet, add a tablespoon of vegetable oil and cook the chicken until browned. Remove from heat and set aside.

      Prepare the Sauce: In a large pot, heat the remaining vegetable oil over medium heat. Add chopped onions and sauté until soft and golden brown, about 10 minutes.

        Add Aromatics: Stir in crushed tomatoes, season with salt and pepper, and cook for another 5 minutes until the mixture thickens. Add the heavy cream to the pot and stir well. Let it simmer for 10 minutes, allowing the flavors to meld.

          Combine Chicken and Sauce: Add the grilled chicken pieces to the sauce and simmer for an additional 5 minutes, ensuring the chicken is coated in the rich sauce.

            Finish and Serve: Adjust seasoning if needed. Garnish with fresh cilantro. Serve hot over basmati rice for a complete meal.
