2 cups baby potatoes, halved

2 cups carrots, sliced into rounds

2 cups zucchini, sliced into half-moons

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and sliced zucchini.

      In a separate small bowl, whisk together the olive oil, minced garlic, dried thyme, dried rosemary, smoked paprika, salt, and pepper.

        Pour the garlic herb mixture over the vegetables and toss well to coat everything evenly.

          Spread the seasoned vegetables in a single layer on a large baking sheet.

            Roast in the preheated oven for about 25-30 minutes or until the potatoes are fork-tender and golden brown, stirring halfway through for even cooking.

              Once roasted, remove from the oven and garnish with fresh chopped parsley before serving.
