1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

2 tablespoons olive oil

½ teaspoon smoked paprika

Chopped parsley, for garnish

Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, smoked paprika, salt, and pepper. Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and fork-tender, flipping once halfway through.

    Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter to the skillet. Once melted, add the steak bites in a single layer (you may need to do this in batches to avoid overcrowding). Season with salt and pepper.

      Sear the Steak: Cook the steak bites for about 2-3 minutes on each side until they develop a nice golden crust. Use a spatula to flip them gently.
