Ingredients

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preparation of Potatoes: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine halved baby potatoes with olive oil, paprika, salt, and pepper. Toss until the potatoes are well-coated.

Roasting the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until golden brown and crispy, tossing halfway through for even cooking.

Cooking the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted and bubbling, add the steak cubes in a single layer, making sure not to overcrowd the pan. Season with salt and pepper.

Searing the Steak: Cook the steak bites for about 2-3 minutes on each side or until they reach your desired level of doneness (for rare, aim for an internal temp of 125°F/52°C).

Adding Garlic and Herbs: Reduce the heat to medium-low. Add the minced garlic, rosemary, and thyme to the skillet with the steak. Stir everything together to combine and cook for another 1-2 minutes until the garlic is fragrant and just golden, being careful not to burn it.

Finishing Touches: Remove the skillet from heat. Stir in the remaining 2 tablespoons of butter, melting it into the steak and garlic mixture for a rich, buttery sauce.

Serving: Serve the garlic butter steak bites alongside the crispy roasted potatoes. Garnish with freshly chopped parsley for a pop of color and added freshness.
