Ingredients
  

2 ribeye steaks (about 1 inch thick)

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

2 tablespoons olive oil

Salt and pepper, to taste

Lemon wedges, for serving (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation of Potatoes:

    - Preheat the oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and half of the chopped rosemary and thyme. Spread them out evenly on a baking sheet.

        Roast the Potatoes:

          - Roast the potatoes in the preheated oven for about 20-25 minutes, or until fork-tender and golden brown, stirring halfway through to ensure even cooking.

            Cooking the Steaks:

              - While the potatoes are roasting, take the steaks out of the refrigerator and let them come to room temperature (about 15-20 minutes).

                - Season both sides of the steaks generously with salt and pepper.

                  Prepare the Garlic Butter:

                    - In a small saucepan over medium heat, melt 2 tablespoons of butter.

                      - Add minced garlic and remaining herbs (rosemary and thyme) to the melted butter. Sauté for 1-2 minutes until fragrant. Remove from heat and set aside.

                        Sear the Steaks:

                          - Heat a large skillet (preferably cast iron) over medium-high heat. Once hot, add the remaining 2 tablespoons of butter.

                            - Immediately add the steaks to the skillet. Sear for 4-5 minutes on one side without moving, until a golden crust forms. Flip and sear the other side for another 4-5 minutes or until you reach your desired level of doneness (135°F for medium-rare).

                              Baste the Steaks:

                                - Reduce the heat to medium-low. Add the garlic butter mixture to the skillet, then use a spoon to baste the steaks with the melted garlic butter for about 2 minutes.

                                  Rest and Serve:

                                    - Remove steaks from the skillet and let them rest for 5-10 minutes.

                                      - Serve the steaks alongside the roasted potatoes with extra garlic butter drizzled over the top. Garnish with chopped parsley and lemon wedges on the side, if desired.
