Garlic Butter Steak and Potatoes Skillet

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tbsp unsalted butter, divided

6 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large skillet, add the baby potatoes and cover them with water. Season the water with salt, then bring it to a boil over medium-high heat. Cook for about 10-12 minutes, or until the potatoes are fork-tender. Drain and set aside.

    Sear the Steak: In the same skillet, heat 2 tablespoons of butter over medium-high heat. Once the butter is melted and bubbly, add the steak pieces in a single layer. Season with salt, pepper, and smoked paprika. Cook for about 3-4 minutes until browned, then flip and cook for an additional 3-4 minutes until the steak is cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Cook the Garlic: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.
