Ingredients

1 lb ground chicken

2 tbsp soy sauce

2 tbsp sriracha (adjust for spice preference)

1 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

2 garlic cloves, minced

1 inch ginger, grated

1 cup bell pepper, diced (red or yellow)

1 cup snap peas (or your favorite green veggies)

2 green onions, sliced

2 cups cooked rice (white, brown, or cauliflower rice)

Sesame seeds for garnish

Instructions

Cook the Chicken: In a large skillet over medium-high heat, add the ground chicken. Cook for about 5-7 minutes until browned and cooked through, breaking it apart with a spatula as it cooks.

Prepare the Sauce: In a small bowl, whisk together soy sauce, sriracha, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Set aside.

Add Vegetables: Once the chicken is cooked, add the diced bell pepper and snap peas to the skillet. Stir-fry for about 2-3 minutes until the veggies are slightly tender.

Combine: Pour the sauce over the chicken and vegetables, stirring well to coat. Cook for an additional 2 minutes to allow the flavors to meld and the sauce to thicken slightly.

Serve: Divide the cooked rice into bowls. Spoon the firecracker ground chicken mixture over the rice. Garnish with sliced green onions and sesame seeds.

Enjoy: Serve immediately while hot, and enjoy your fiery, delicious meal!
