Ingredients

1 cup jasmine rice

1 1/2 cups chicken broth (or water)

1 cup canned corn (drained)

1 cup cooked rotisserie chicken, shredded

1 teaspoon chili powder

1 teaspoon garlic powder

2 tablespoons lime juice

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions

Cook the Rice: In a saucepan, combine the jasmine rice and chicken broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.

Prepare the Corn and Chicken: In a skillet, over medium heat, combine the drained corn, shredded chicken, chili powder, garlic powder, lime juice, salt, and pepper. Stir to combine and heat through for about 5-7 minutes, allowing the flavors to meld.

Assemble the Bowls: Fluff the cooked rice with a fork, then divide it evenly into serving bowls. Top the rice with the corn and chicken mixture.

Garnish and Serve: Finish each bowl with a sprinkle of fresh cilantro. Optional: add a lime wedge on the side for extra flavor!
