Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

15 oz ricotta cheese

1 cup mozzarella cheese, shredded (plus more for topping)

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (homemade or store-bought)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.

      In a large mixing bowl, combine the ricotta cheese, chopped spinach, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.

        Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish.

          Using a spoon, fill each cooked pasta shell with the spinach and ricotta mixture. Place the filled shells in the baking dish, open side up.

            Once all the shells are filled and placed in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese on top for a cheesy finish.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.

                Allow to cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
