Ingredients

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon dried oregano

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions

Cook the Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook until al dente, about 8-10 minutes. Drain and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, minced garlic, spinach, egg, salt, pepper, and oregano. Mix until well incorporated.

Stuff the Shells: Preheat your oven to 375°F (190°C). Using a spoon, fill each cooked shell generously with the spinach and ricotta mixture.

Assemble the Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Carefully place the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the shells and sprinkle with the remaining mozzarella cheese.

Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Once baked, remove from the oven and let sit for a few minutes before serving. Garnish with fresh basil, if desired.
