Ingredients

8 oz linguine pasta

2 tablespoons unsalted butter

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1/4 cup chopped fresh parsley

1/2 cup heavy cream

1/2 cup chicken broth

1/2 teaspoon dried thyme

Juice of 1 lemon

Grated parmesan cheese for serving (optional)

Instructions

Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

Prepare the Chicken: In a large skillet over medium heat, melt the butter. Once melted, add the chicken pieces and season with salt, black pepper, paprika, and cayenne pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Garlic and Herbs: Stir in the minced garlic and dried thyme, cooking for another minute until fragrant.

Make the Sauce: Pour in the chicken broth and heavy cream. Scrape the bottom of the skillet with a wooden spoon to deglaze any browned bits. Bring the mixture to a gentle simmer.

Combine Pasta and Sauce: Add the cooked linguine to the skillet and toss to combine, ensuring the pasta is coated in the creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Finish with Lemon and Parsley: Squeeze the lemon juice over the pasta and add the chopped parsley. Toss again to incorporate the flavors.

Serve: Plate the linguine and chicken, garnishing with additional parsley and grated parmesan cheese if desired. Enjoy your cowboy-inspired meal!
