Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 boneless, skinless chicken breasts

1/4 cup chipotle ranch dressing

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

1 cup cooked white rice (or cilantro-lime rice)

1 cup black beans, rinsed and drained

1 cup corn (canned, frozen, or fresh)

1 cup shredded sharp cheddar cheese

1 avocado, sliced

1 cup fresh cilantro, chopped

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, mix the chipotle ranch dressing, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them evenly. Let it marinate for at least 30 minutes (or up to overnight in the fridge for maximum flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, grill the marinated chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

      Prepare the Burrito Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, and half of the shredded cheese. Mix together until well blended.

        Assemble the Burritos: On each tortilla, layer a generous scoop of the rice mixture, sliced grilled chicken, avocado, fresh cilantro, and the remaining cheese.

          Roll the Burritos: Fold in the sides of the tortilla and then roll it up from the bottom to enclose all the fillings tightly.

            Grill the Burritos: Place the burritos seam-side down on the grill for about 2-3 minutes until they are golden and crispy. Flip and grill for an additional 2-3 minutes on the other side.

              Serve: Remove from heat, slice in half if desired, and serve with lime wedges and extra chipotle ranch dressing on the side for dipping.
