2 large cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 clove garlic, minced

1 teaspoon ginger, grated

2 green onions, chopped

1 tablespoon sesame seeds

Red pepper flakes (to taste)

Prepare the Cucumbers: Place the thinly sliced cucumbers in a medium bowl. Sprinkle the salt over the cucumbers and let them sit for 10 minutes to draw out excess water. After 10 minutes, drain any released liquid.
