Easy Asian Cucumber Salad

Ingredients
  

2 large cucumbers, thinly sliced

1 tablespoon salt

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon honey (or agave syrup)

1 teaspoon freshly grated ginger

1 clove garlic, minced

1 tablespoon sesame seeds

2 green onions, finely sliced

1 teaspoon red pepper flakes (optional)

Fresh cilantro leaves for garnish

Instructions
 

In a large bowl, combine the sliced cucumbers and salt. Let them sit for about 10-15 minutes to draw out excess moisture.

    Rinse the cucumbers under cold water to remove excess salt, then drain and pat dry with paper towels.

      In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic until well combined.

        Pour the dressing over the cucumbers and toss gently to coat all the slices.

          Add in the sesame seeds, green onions, and red pepper flakes (if using) and mix well.

            Let the salad sit for 10-15 minutes at room temperature to allow the flavors to meld.

              Garnish with fresh cilantro before serving.
