8 ounces elbow macaroni

6 hard-boiled eggs, peeled and chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper, to taste

1/4 cup chopped green onion

1/2 cup diced celery

1/2 cup diced pickles or relish

Fresh parsley, for garnish

Instructions
 

Cook the elbow macaroni according to package instructions. Drain and rinse under cold water to cool it down.

    In a large mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Mix until smooth and creamy.

      Add the cooled pasta to the egg mixture, stirring gently to combine.

        Fold in the chopped green onions, diced celery, and pickles or relish until evenly distributed.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or mustard as desired.

            Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 1 hour to allow flavors to meld.

              Before serving, garnish with chopped fresh parsley for a pop of color. Enjoy!
