Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Oil for frying (vegetable or canola)

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust for desired spice level)

1 tsp lime juice

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1 inch each). Pat them dry with paper towels.

    Set Up the Breading Station: In three separate bowls, place the flour seasoned with garlic powder, paprika, salt, and pepper in the first bowl. In the second bowl, beat the two eggs. In the third bowl, add the panko breadcrumbs.

      Coat the Salmon: Dip each salmon cube first into the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, allowing excess to drip off, and finally coat with panko breadcrumbs. Repeat until all salmon pieces are coated.

        Fry the Salmon Bites: In a large skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat. Once the oil is hot, add the salmon bites in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and place on a plate lined with paper towels to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined.
