Crispy Bang Bang Chicken

2 lbs chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1 cup all-purpose flour

1 cup panko breadcrumbs

1/2 cup cornstarch

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon lime juice

1 teaspoon honey

Marinate the Chicken: In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken pieces, making sure they're well-coated. Cover and refrigerate for at least 1 hour or overnight for the best flavor.

    Prepare the Breading Station: In three separate shallow dishes, place the flour in the first dish, the cornstarch in the second, and the panko breadcrumbs mixed with a pinch of salt and pepper in the third.

      Coat the Chicken: Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece first in flour, then in cornstarch, and finally coat it well in the panko breadcrumbs. Set aside on a baking sheet.

        Fry the Chicken: In a large pot or deep skillet, heat oil over medium-high heat until hot (about 350°F/175°C). Fry the chicken pieces in batches, being careful not to overcrowd the pan. Cook for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

          Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth and well combined.

            Toss and Serve: In a large bowl, toss the crispy chicken with the Bang Bang sauce until evenly coated. Serve immediately with your favorite side dishes or a fresh salad.
