Ingredients

8 oz spaghetti or fettuccine

2 tablespoons ssamjang (Korean spicy dipping sauce)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 cup heavy cream

2 tablespoons unsalted butter

2 cloves garlic, minced

1 small onion, finely chopped

1 cup baby spinach

1/2 cup grated Parmesan cheese (plus more for serving)

1/4 cup chopped green onions

1 teaspoon toasted sesame seeds

Salt and pepper to taste

Red pepper flakes (optional, for extra heat)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Prepare the Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and chopped onion, sautéing for about 3-4 minutes until the onions turn translucent.

Mix in Ssamjang: Stir in the ssamjang, soy sauce, and sesame oil into the skillet. Cook for an additional 1-2 minutes until the mixture is fragrant.

Create the Creamy Base: Lower the heat and pour in the heavy cream, stirring continuously until the sauce thickens slightly, about 3-5 minutes. If the mixture is too thick, gradually add reserved pasta water until you achieve your desired consistency.

Combine Pasta and Greens: Add the cooked pasta and baby spinach to the sauce, tossing everything together to coat well. Cook for another 2 minutes until the spinach is wilted.

Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and well distributed. Season with salt, pepper, and red pepper flakes if using.

Garnish and Serve: Transfer the creamy pasta to plates and garnish with chopped green onions, toasted sesame seeds, and extra Parmesan cheese if desired. Enjoy your unique Korean-inspired dish!
