1 pound rotini pasta

2 tablespoons olive oil

4 boneless, skinless chicken thighs

Salt and pepper, to taste

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup baby spinach (optional)

Fresh parsley, chopped (for garnish)

Cook the Rotini: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Prepare the Chicken: Season the chicken thighs with salt and pepper on both sides.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
