Ingredients

1 lb chicken sausage, sliced

1 cup orzo pasta

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup baby spinach

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil for garnish (optional)

Instructions

Heat the Oil: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage from the pan and set aside.

Sauté Aromatics: In the same pan, add the chopped onion and garlic. Sauté until the onions become translucent, about 3-4 minutes.

Add Orzo: Stir in the orzo pasta and cook for another 2 minutes, allowing it to lightly toast and absorb the flavors.

Combine Ingredients: Pour in the chicken broth, heavy cream, and Italian seasoning. Stir well to combine, then bring the mixture to a gentle simmer.

Simmer and Cook: Reduce the heat to low and let the orzo cook, stirring occasionally, until it is tender and the liquid is mostly absorbed, about 10-12 minutes.

Add Spinach and Tomatoes: Once the orzo is cooked, stir in the baby spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts.

Finish with Sausage: Return the cooked chicken sausage to the pan, mix well, and season with salt and pepper to taste.

Serve: Remove from heat and serve hot, garnished with grated Parmesan cheese and fresh basil if desired.
