Creamy Cajun Chicken Pasta

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

8 oz fettuccine pasta

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Start by seasoning the chicken breasts with Cajun seasoning, ensuring they’re well-coated on all sides.

    Cook the fettuccine pasta according to the package instructions. Drain and set aside, reserving about a cup of the pasta water.

      In a large skillet over medium-high heat, heat the olive oil and butter. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest before slicing.

        In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

          Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir until well combined. Let it simmer for a few minutes until slightly thickened.

            Add cherry tomatoes and spinach. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften.

              Stir in the grated Parmesan cheese, mixing until it melts into the sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency. Season with salt and pepper to taste.

                Slice the cooked chicken and add it back to the skillet along with the cooked fettuccine. Toss everything together until well coated with the creamy sauce.

                  Serve hot, garnished with fresh parsley for a pop of color.
