Creamy Broccoli and Chicken Penne

Ingredients
  

8 oz penne pasta

1 lb boneless, skinless chicken breasts, cubed

2 cups broccoli florets (fresh or frozen)

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper to taste

Optional: red pepper flakes for a spicy kick

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Penne: In a large pot of salted boiling water, cook the penne according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the cubed chicken and season with salt, black pepper, and Italian seasoning. Cook for about 6-8 minutes, until the chicken is golden and cooked through. Remove from the skillet and set aside.

      Cook the Broccoli: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the broccoli florets and a splash of water (to help steam). Cook for about 3-4 minutes, until the broccoli is tender yet bright green.

        Make the Cream Sauce: Reduce the heat to low, and add the heavy cream to the skillet. Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

          Combine: Return the chicken to the skillet, add the cooked penne, and stir until everything is well coated with the creamy sauce. If desired, sprinkle with red pepper flakes for added heat.

            Serve: Plate the creamy broccoli and chicken penne. Garnish with fresh chopped parsley and extra Parmesan if desired.
