6 slices of thick bread (such as challah or brioche), cut into small cubes

4 large eggs

1 cup whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1 teaspoon vanilla extract (for topping)

1 tablespoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, granulated sugar, 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, and salt until well combined.

      Add the Bread: Gently fold the bread cubes into the egg mixture, ensuring all pieces are soaked. Allow the mixture to sit for about 10 minutes to absorb the flavors.

        Make the Muffins: Fill each muffin cup with the soaked bread mixture, pressing down lightly to pack them in. Use a spoon to slightly mound them if needed.
