The star of this recipe is undoubtedly the chicken thighs. Opting for bone-in, skin-on chicken thighs is essential for achieving the best flavor and texture. This cut of meat is known for its rich, juicy flavor, which comes from the fat under the skin and the bone itself. Cooking chicken thighs results in tender, moist meat that remains delicious even after cooking. While chicken breasts can sometimes be dry, thighs hold their moisture exceptionally well, making them a forgiving choice for both novice and seasoned cooks alike.

Ingredients

4 bone-in, skin-on chicken thighs

1/4 cup fresh lime juice (about 2-3 limes)

1/4 cup olive oil

1/4 cup fresh cilantro, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Lime wedges and additional cilantro for garnish

Instructions

Make the Marinade: In a medium bowl, whisk together the lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, black pepper, and red pepper flakes (if using).

Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each thigh is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 4 hours for best results).

Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 425°F (220°C).

        Cook the Chicken:

          - Grilling: Remove the chicken from the marinade and let the excess drip off. Grill the chicken thighs, skin side down, for about 5-7 minutes, until the skin is crispy and golden. Flip and cook for an additional 7-10 minutes or until the internal temperature reaches 165°F (74°C).

            - Baking: Place the marinated chicken thighs on a baking sheet lined with parchment paper or foil. Bake for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).

Rest and Serve: Once cooked, let the chicken thighs rest for about 5 minutes before serving. Garnish with lime wedges and extra cilantro.
