Chipotle Honey Chicken Skewers

Ingredients
  

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons chipotle powder

2 tablespoons honey

2 tablespoons olive oil

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 yellow onion, cut into 1-inch pieces

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

Instructions
 

In a large bowl, combine the chipotle powder, honey, olive oil, soy sauce, minced garlic, cumin, smoked paprika, salt, and pepper to create the marinade.

    Add the chicken pieces to the marinade and toss well to ensure they're thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 4 hours, or overnight for maximum flavor.

      Preheat your grill or grill pan to medium-high heat.

        Thread the marinated chicken pieces onto skewers, alternating with red bell pepper and onion pieces for color and flavor.

          Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

            Remove from the grill and let rest for a couple of minutes before serving.
