Chinese Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup boneless chicken breast, diced

2 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce

2 tablespoons vegetable oil (divided)

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, sliced

2 cloves garlic, minced

1 teaspoon ginger, grated

Salt and pepper to taste

Optional: sesame oil and cilantro for garnish

Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool and dry slightly. Day-old rice works best as it’s less sticky.

    Cook the Chicken: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken, season with salt and pepper, and stir-fry until cooked through, about 5 minutes. Remove the chicken from the pan and set aside.

      Scramble the Eggs: In the same wok, add a bit more oil if necessary, and pour in the beaten eggs. Scramble until they're fully cooked and then remove them from the pan.

        Stir-Fry Ingredients: Add the remaining tablespoon of oil to the wok. Add the minced garlic and grated ginger, stirring quickly until fragrant, about 30 seconds.

          Add Vegetables: Toss in the mixed vegetables and continue to stir-fry for 2-3 minutes until they are tender.

            Combine Everything: Next, add the cooked rice to the wok. Use a spatula to break up any clumps. Add the cooked chicken, scrambled eggs, soy sauce, and oyster sauce. Stir-fry everything together for about 5 minutes, making sure the rice is heated through and the sauces are evenly distributed.

              Finish and Serve: Stir in the sliced green onions and drizzle a bit of sesame oil for flavor. Taste and adjust seasoning with more soy sauce, salt, or pepper if necessary. Garnish with fresh cilantro if desired. Serve hot!
