Chicken Tagine Recipe with Olives and Lemons

2 lbs chicken thighs, skinless and boneless

1 large onion, finely chopped

2 cloves garlic, minced

1 tsp ground ginger

1 tsp ground cumin

1 tsp ground cinnamon

1/2 tsp turmeric

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2 cups chicken broth

1 cup green olives, pitted and halved

1 large preserved lemon, rinsed and quartered (substituted with zest and juice of 1 lemon if unavailable)

1/4 cup fresh cilantro, chopped

1/4 cup fresh parsley, chopped

4 tbsp olive oil

Salt to taste

1 cup couscous (for serving, optional)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt and set aside. In a large tagine or heavy bottom pot, heat olive oil over medium heat.

    Sauté Aromatics: Add the chopped onion and garlic to the pot. Sauté until the onion becomes translucent (about 5 minutes).

      Add Spices: Stir in the ginger, cumin, cinnamon, turmeric, black pepper, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.

        Brown the Chicken: Add the seasoned chicken thighs into the pot. Brown on all sides for about 5-7 minutes.

          Simmer: Pour in the chicken broth, and bring to a gentle boil. Add the quartered preserved lemon and olives. Reduce the heat to low and cover the pot. Let it simmer for about 45 minutes until the chicken is tender and cooked through.

            Add Fresh Herbs: Stir in the chopped cilantro and parsley just before serving to enhance the flavor.

              Prepare Couscous (Optional): If serving with couscous, prepare it according to package instructions. Fluff it with a fork and serve it alongside the tagine.

                Serve: Serve the chicken tagine warm, garnished with additional cilantro if desired, alongside the fluffy couscous or crusty bread to soak up the flavorful sauce.
