Ingredients
  

1 lb ground chicken

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

1 tablespoon olive oil

1 red bell pepper, cut into chunks

1 zucchini, sliced into rounds

1 yellow onion, cut into chunks

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

In a large mixing bowl, combine the ground chicken, parsley, garlic, smoked paprika, onion powder, oregano, red pepper flakes, salt, and pepper. Mix until well combined and the spices are evenly distributed.

    Preheat your grill or grill pan to medium-high heat.

      Form the chicken mixture into small sausage shapes or patties, about 2 inches in diameter.

        Thread the chicken sausages onto the skewers, interspersing them with chunks of red bell pepper, zucchini rounds, and onion pieces for added flavor and color.

          Brush the skewers lightly with olive oil to prevent sticking.

            Place the skewers on the heated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.

                Serve with your favorite dipping sauce or over a bed of mixed greens.
