2 packs of instant ramen noodles (discard the seasoning packets)

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons vegetable oil

1 cup broccoli florets

1 red bell pepper, sliced

1 cup snap peas

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon chili garlic sauce (optional, for heat)

Sesame seeds (for garnish)

Fresh cilantro or basil (for garnish, optional)

Instructions
 

Cook the Ramen: Boil water in a pot and cook the ramen noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.

    Prepare the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced chicken and cook until golden and no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add a bit more oil if necessary and toss in the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Then add the broccoli, red bell pepper, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

        Combine Everything: Add the cooked chicken back to the skillet, followed by the cooked ramen noodles. Pour in the soy sauce, oyster sauce, sesame oil, and chili garlic sauce (if using). Toss everything together gently using tongs or a spatula until well combined and heated through, about 2-3 minutes.
