2 large boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

4 tablespoons olive oil, divided

4 slices of crusty garlic bread

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh arugula or spinach leaves (for garnish)

Instructions
 

Prepare the Chicken:

    - Preheat your grill or stovetop skillet over medium heat.

      - Pat the chicken breasts dry and season both sides with garlic powder, onion powder, Italian seasoning, salt, and pepper.

        Cook the Chicken:

          - Drizzle 2 tablespoons of olive oil onto the grill or skillet. Add the chicken breasts and cook for about 6-7 minutes per side, or until the chicken is completely cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from heat.

            Shred the Chicken:

              - Allow the chicken to rest for about 5 minutes, then shred into bite-sized pieces using two forks or by hand.

                Mix the Chicken Filling:

                  - In a mixing bowl, combine the shredded chicken, mozzarella cheese, Parmesan cheese, chopped parsley, and red pepper flakes (if using). Stir to mix evenly.
