1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

4 large flour tortillas

1 cup salsa (mild or hot, depending on your preference)

1/2 cup sour cream

Fresh cilantro for garnish (optional)

For the Crispy Fries:

4 medium russet potatoes, cut into thin fries

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika
