Cheesy bacon potato breakfast casserole

1 lb (450g) bacon, diced

4 medium potatoes, peeled and cut into 1-inch cubes

1 medium onion, diced

2 cups shredded cheddar cheese

6 large eggs

1 cup milk

1 tsp garlic powder

½ tsp paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels, leaving the rendered fat in the skillet.

    Sauté the Vegetables: In the same skillet with the bacon fat, add the diced onion and cubed potatoes. Sauté for about 10-15 minutes or until the potatoes are tender and the onions are translucent. Stir occasionally to avoid browning too much.

      Prepare the Casserole Dish: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.

        Combine Ingredients: In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper. Add the sautéed potato and onion mixture, cooked bacon, and 1 ½ cups of shredded cheddar cheese. Stir until evenly combined.

          Pour and Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Top with the remaining ½ cup of cheddar cheese.

            Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is slightly golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.
