Carrot Cake Oatmeal

1 cup rolled oats

2 cups milk (or dairy-free alternative)

1 medium carrot, grated

1/4 cup shredded coconut (unsweetened)

1/4 cup raisins (or chopped dates)

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped pecans (or walnuts)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: Greek yogurt, additional nuts, or a drizzle of honey

Instructions
 

In a medium saucepan, combine the rolled oats and milk. Bring to a gentle boil over medium heat.

    Once boiling, reduce the heat to low and add the grated carrot, coconut, raisins, cinnamon, nutmeg, and a pinch of salt. Stir well to combine.

      Continue to cook, stirring occasionally, for about 5-7 minutes until the oats are cooked and the mixture is creamy. If it gets too thick, you can add a splash of milk.

        Remove from heat and stir in the maple syrup, vanilla extract, and chopped pecans.

          Let it sit for a minute or two to cool slightly and thicken up.

            Serve warm in bowls and add your desired toppings such as a dollop of Greek yogurt, extra pecans, or a drizzle of honey for added sweetness.
