Ingredients
  

2 large carrots, grated

1 large apple (preferably a tart variety, like Granny Smith), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

1/4 cup plain Greek yogurt or vegan yogurt

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple.

    Add the raisins or dried cranberries and the chopped walnuts or pecans to the bowl.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, ground cinnamon, and a pinch of salt until smooth and well combined.

        Pour the yogurt dressing over the carrot and apple mixture and gently toss until everything is well coated.

          Taste and adjust sweetness or acidity by adding more honey or lemon juice, if desired.

            Allow the salad to chill in the refrigerator for at least 15-30 minutes to let the flavors meld.

              Serve garnished with fresh mint leaves, if using.
