Bruschetta Chicken Pasta

Ingredients
  

2 boneless, skinless chicken breasts

8 oz penne pasta

2 cups cherry tomatoes, halved

1/4 cup fresh basil, chopped

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/2 cup mozzarella cheese, shredded

2 tablespoons olive oil

Salt and pepper, to taste

Red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: Season the chicken breasts with salt, pepper, and a sprinkle of red pepper flakes if desired. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

      Make the Bruschetta Topping: In the same skillet, reduce the heat to medium. Add the remaining tablespoon of olive oil and sauté the minced garlic for about 1 minute, until fragrant. Add the halved cherry tomatoes and balsamic vinegar, stirring gently. Cook for about 4-5 minutes until the tomatoes are softened and juicy.

        Combine: Add the cooked pasta and sliced chicken into the skillet with the bruschetta mixture. Gently toss to combine everything. Stir in the fresh basil and add more salt and pepper to taste.

          Serve: Remove from heat and sprinkle the shredded mozzarella cheese over the top. Serve warm, garnished with additional basil if desired.
