Broccoli Cheese Soup Recipe

4 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, diced

4 cups vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

2 tablespoons cornstarch (optional for thickening)

Fresh chives or croutons for garnish

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add Broccoli and Broth: Add the broccoli florets to the pot, followed by the vegetable broth. Bring to a boil, then reduce heat and let simmer until the broccoli is tender, about 10-15 minutes.

      Blend: Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until desired consistency is reached.

        Stir in the Cream and Cheese: Return the blended soup to medium heat. Stir in the heavy cream and grated cheddar cheese, allowing the cheese to melt into the soup. Season with salt, black pepper, and nutmeg (if using). If you desire a thicker soup, mix cornstarch with a little cold water to create a slurry, then stir it into the soup until thickened.
