Blueberry Lemonade

Just simmer blueberries to make a flavorful juice, then mix with lemon juice and sugar for a delightful balance. Ingredients
  

1 cup fresh blueberries (plus extra for garnish)

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup granulated sugar (adjust to taste)

4 cups cold water

Ice cubes

Fresh mint leaves (for garnish)

Instructions
 

In a medium saucepan, combine the blueberries and 1 cup of water. Bring to a simmer over medium heat and cook until the blueberries burst and release their juices, about 5 minutes.

    Remove the saucepan from heat and let the blueberry mixture cool for a few minutes. Once cooled, strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract as much juice as possible. Discard the solids and set the blueberry juice aside.

      In a large pitcher, combine the freshly squeezed lemon juice and granulated sugar. Stir well until the sugar is fully dissolved.

        Add the reserved blueberry juice to the pitcher and mix well.

          Pour in the remaining 3 cups of cold water and stir to combine. Taste and adjust the sweetness and acidity if necessary by adding more sugar or water.

            Serve the blueberry lemonade over ice, garnished with fresh blueberries and mint leaves.
