Black Pepper Chicken

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 bell peppers (1 red and 1 green), sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons freshly ground black pepper (adjust to taste)

1 teaspoon sugar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt to taste

Chopped green onions and sesame seeds for garnish

Marinate the Chicken: In a large bowl, combine the chicken pieces with soy sauce, oyster sauce, sugar, and half of the black pepper. Mix well and let it marinate for at least 30 minutes.

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the sliced onion, minced garlic, and ginger. Sauté until the onions become translucent and fragrant, about 2-3 minutes.

        Add Vegetables: Add the sliced bell peppers to the skillet and stir-fry for another 3-4 minutes until they are tender but still crisp.

          Combine and Thicken Sauce: Return the cooked chicken to the skillet. Sprinkle the remaining black pepper over the mixture. Pour the cornstarch slurry into the skillet and stir everything together, allowing it to thicken for 1-2 minutes. Adjust the seasoning with salt as necessary.

            Garnish and Serve: Remove from heat, and garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or with noodles.
