Ingredients

3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tsp baking soda

1/2 tsp salt

1 1/2 cups all-purpose flour

1/2 cup chopped macadamia nuts or walnuts (optional)

1/4 teaspoon ground cinnamon (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

Add the mashed bananas, crushed pineapple, eggs, and vanilla extract to the mixture. Stir until well combined.

In a separate bowl, mix the flour, baking soda, salt, and cinnamon (if using) together. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix.

Fold in the shredded coconut and chopped nuts (if using), ensuring they are evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake in preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Slice and enjoy your delicious Hawaiian banana bread as a delightful breakfast, snack, or dessert!
