1/4 cup finely chopped green onions

1/2 cup cooked minced chicken (or tofu for a vegetarian option)

1 garlic clove, minced

1 tsp curry powder

1 tsp soy sauce

For the Soup:

4 cups vegetable broth

1 can (14 oz) coconut milk

2 tbsp red curry paste

1 cup diced carrots

1 cup diced sweet potatoes

1 cup snap peas

1 tbsp lime juice

Fresh cilantro, for garnish
