1 cup mixed vegetables (carrots, peas, and corn)

1 tablespoon soy sauce

4 cups vegetable or chicken broth

1 can (400ml) coconut milk

2 tablespoons curry powder

1 tablespoon turmeric

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 inch ginger, grated

Salt and pepper to taste

Instructions
 

Make the Dumplings:

    - In a mixing bowl, combine the flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for 5-7 minutes until it’s smooth.

        - Roll out the dough to about 1/8 inch thick and cut into circles (about 3 inches in diameter). Place a teaspoon of the vegetable filling in the center of each circle.

          - Fold the dough over to create a half-moon shape, sealing the edges tightly using your fingers or a fork.

            Prepare the Soup:

              - In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, and grated ginger; sauté for about 5 minutes until fragrant and softened.
