Beef with Oyster Sauce

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tbsp vegetable oil

4 cloves garlic, minced

1 small onion, thinly sliced

1 bell pepper, cut into strips (red or green)

1 cup broccoli florets

1 cup snap peas

3 tablespoons oyster sauce

2 tablespoons soy sauce

1 tbsp hoisin sauce

1 tsp cornstarch mixed with 2 tbsp water (slurry)

1 tsp fresh ginger, minced

Fresh cilantro or green onions, for garnish

Cooked steamed rice, for serving

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, 1 tablespoon of soy sauce, and the minced ginger. Let it marinate for at least 15 minutes to absorb the flavors.

    Stir-fry the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and, when fragrant, toss in the onion and bell pepper. Stir-fry for about 2-3 minutes until they start to soften.

      Cook the Beef: Push the vegetables to one side of the skillet and add the remaining oil. Increase the heat to high and add the marinated beef to the pan. Stir-fry for 2-4 minutes until the beef is browned but not fully cooked.

        Add Broccoli and Snap Peas: Mix in the broccoli florets and snap peas, cooking for another 2-3 minutes until the vegetables are tender-crisp.

          Create the Sauce: Pour in the oyster sauce, remaining soy sauce, and hoisin sauce. Stir well to combine all the ingredients. Allow it to simmer for a minute.

            Thicken the Sauce: Add the cornstarch slurry to the pan and stir continuously until the sauce thickens, about 1-2 minutes. Make sure the beef is properly cooked through.

              Serve: Remove from heat, then garnish with fresh cilantro or sliced green onions. Serve immediately over a bed of steamed rice.
