Bang Bang Chicken Bowls

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

¼ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha

4 cups cooked rice (jasmine or brown rice)

2 cups mixed greens (spinach, arugula, or lettuce)

1 cucumber, thinly sliced

1 large carrot, julienned

¼ cup chopped green onions

Sesame seeds for garnish (optional)

Instructions
 

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels. Cut them into bite-sized pieces and set aside.

    Set Up Breading Station: In one bowl, place the cornstarch. In a second bowl, whisk together the eggs. In a third bowl, combine the panko breadcrumbs, garlic powder, paprika, salt, and black pepper.

      Bread the Chicken: Dip each piece of chicken into the cornstarch, fully coating it. Shake off excess cornstarch, then dip it in the egg mixture. Finally, coat it with the seasoned panko breadcrumbs, pressing to adhere.

        Fry the Chicken: Heat a generous amount of oil (about ½ inch deep) in a large skillet over medium-high heat. Once hot, carefully add the breaded chicken in batches, being mindful not to crowd the pan. Fry until golden brown and crispy, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
