Bang Bang Chicken Bowl

1 lb (450g) boneless, skinless chicken thighs

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced bell peppers (red, yellow, or orange)

1 cup snap peas

2 green onions, sliced

1 avocado, sliced

½ cup fresh cilantro, chopped

For the Bang Bang Sauce:

⅓ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Salt and pepper to taste

Instructions
 

Prepare the Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, and a pinch of salt and pepper. Adjust spice level as desired. Set aside.

    Cook the Chicken: In a skillet over medium heat, add a drizzle of oil. Season the chicken thighs with salt and pepper and cook for about 5-6 minutes on each side, or until fully cooked and golden brown. Remove from heat and let them rest for a few minutes before slicing.

      Sauté the Vegetables: In the same skillet, add the snap peas, bell peppers, and shredded carrots. Sauté for 3-4 minutes until they are tender-crisp. Remove from heat.

        Assemble the Bowls: In serving bowls, start with a base of jasmine rice. Top with sliced chicken, sautéed vegetables, avocado slices, and sprinkle with green onions and cilantro.

          Drizzle the Bang Bang Sauce generously over the top of the bowls. Serve immediately and enjoy!
